Brian Donnelly is executive chef & co-founder of food start-up Bia Rebel, based in Belfast. Bia Rebel serves high-quality, artisanal ramen using small-scale, locally sourced traditional ingredients and hand-made noodles.


Brian started his career at Ballymaloe, where he worked at age 17, and then spent several years working in London for chefs such as Michel Roux, Jr and Gordon Ramsey. At age 20, he worked with Kevin Thornton in Thornton's in Dublin when it received its second Michelin star. He founded Bia Rebel with his partner, Jenny Holland, in 2016, aiming to bring high-quality, sustainably sourced ingredients to a wider, mainstream market.
