‘Nomad Chef’ Antony Cointre is from the school of cooks who try to create magic with the purity of best ingredients paired with the precision of technique. Virtually self taught, Antony fell in love with feeding others while at the table of a Sarthe legend, Jeannette Rabache, who served market fresh feasts well into her 90s. Antony’s subsequent mentors in Paris were Yves Camdeborde, Inaki Aizpitarte and Raquel Carena. Devoted to artisanal winemaking, favouring small producers who harvest and treat the fruit as has been done for centuries with minimal intervention, Antony also founded the natural wine festival ‘Vini Circus’ in Brittany over 10 years ago and will be bringing some of his favourites with him for you to taste. Antony will be sourcing ingredients for each day’s market menu from west Cork producers and markets.
